Spinach-stuffed Sweet Potato with Gingered Snow Peas
Another very good dinner, though I don't particularly care for the wait time when baking potatoes. (I can't talk myself into trying the microwave for that.) The sweet potato is stuffed with spinach sautéed in Thai red curry paste and lots of ginger. And there's just a hint of coconut milk, though the flavour doesn't come through as strongly as I'd have liked. The sugar snap peas have also been sautéed in ginger. Yum.
