Stewed Lima Beans with Tomatoes on Brown Rice


I'm very in love with Lima beans right now - they're so tasty! The flavour is fantastic and I love the texture and they're just delicious. This looks a bit unappetizing (so says my brother in law), but it was really very good.

The slight bitterness of the Lima beans sits really nicely against the sweet tomatoes and the licorice-hint of fennel seeds. I stirred it up with the brown rice and it was a big ugly mess of great tasting good.
